I hope you are having a good start to your week! Mondays can always be a little hectic but since I have Tuesdays off I enjoy the first half of the week.
So let’s get straight to it, I think salads always taste a little better in the summer.. who is with me?! One summer I remember just wanting a chicken Caesar salad every night for dinner. Since then I’ve gotten off just chicken and started adding a variety of toppings to add more flavor to my salads.
If you haven’t tried adding fruit to top off your salad this recipe might just change your mind. To start off, I decide the base of my salad (which is either spinach or romaine). For this particular salad I am going to use a 50-50 mix. I add my whole bag of salad into my bowl and then chop my strawberries and measure out my blueberries.
Oh yeah! I can’t forget to pour a glass of wine while I make this easy dinner salad 🙂
- 1 bag of spinach
- 2 cups of sliced strawberries
- 3/4 cup of blueberries
- 1 avocado sliced
- 1/4 cup feta cheese
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 Tbsp honey
- pinch of salt and pepper to taste
This dressing is so easy and tasty! All you have to do is measure out your ingredients and pour into side bowl (I put mine in a little bowl that has a lid so if I didn’t use all of it I could save for a different day or salad). Stir well then pour over top of your salad. I like to wait until right before serving to pour the dressing onto because no one likes soggy salad.
If you don’t like balsamic vinegar, an alternative dressing could be ranch dressing or a raspberry vinaigrette. This was such a huge hit when I made it for my family. My dad was still raving about it 3 days later!
This salad took me less than 15 minutes to make and we still had some left over for lunch the next day. If you wanted to add grilled chicken over top that would be an awesome additive!
