I hope your week is going well. Mine has been calm and cool (freezing actually with the temps outside ;)). And by the looks of the weather forecast we are going to get another round of snow. Snow doesn’t bother me until it turns into slush and I drag it into the house, who is with me?!
Anyway, my mom and I have this fun tradition on my day off we either meet for lunch or I whip something up. This year I have been trying to focus more on eating in instead of going out to eat and that just so happens to put my cooking skills to the test. I have thoroughly been enjoying this challenge to myself. Browsing Pinterest helps me get ideas on easy lunch and dinner ideas.
On the menu for today’s easy lunch is: Spaghetti squash chow mein, fruit, and honey rolls. This chow mein recipe was so easy and fast that I thought you might also like to give it a shot!
- 1/2 bag of cabbage
- 1/2 cooked & shredded spaghetti squash
- 3 stalks of celery
- 1/4 cup diced onions
- 1 Tbsp olive oil
- 1/4 cup soy sauce
- 1 Tbsp brown sugar
- 1 tsp corn starch
- pinch of garlic salt
By looking at the ingredients list I’m not even intimidated and you shouldn’t be either! Depending on how many people are eating, you can double the recipe. This will serve 3 people.
Okay so let’s get to it! I like to begin by getting out all of my ingredients and setting them off to the side. Once you have everything out, start by chopping your celery and onions. Get out your skillet and turn to medium heat. Add in 1 Tbsp olive oil, celery, and onions. Let sauté for 5 minutes.
Now, lets make our sauce. In separate bowl add 1/4 cup soy sauce, 1 Tbsp packed brown sugar, 1 tsp corn starch, and pinch of garlic salt. Whisk together in bowl and set aside.
Next, add in 1/2 bag of cabbage and let sauté for another 5 minutes.
Last step, add in 1/2 spaghetti squash and sauce mixture. Stir all together and let sauté for another 5 minutes now on low heat.
And voila! I added chopped chicken for some protein, totally optional but y’all how easy was that?! So tasty and easy. For our lunch I also put out some fruit and biscuits with honey.
Perfect little lunch with my mom! I love being able to do this once a week and spend an hour with her during the week. What’s your favorite time of the week?
